Salmon shiitake truffel butter with black rice and mushroom salsa

This Salmon Shiitake Truffle Butter with Black Rice and Mushroom Salsa recipe might be just what you’re looking for.

Ingredients

Mowi salmon with white truffle shiitake mushroom butter
1 cup cooked black rice
2 oz white button mushrooms
3 whole baby carrots
¼ red onion
½ jalapeño
5 sprigs coriander
1 lime

Preparation
  1. Season the salmon and then place the butter in the centre of the salmon. Air fry for 8 mins at 220°C.
  2. Wash and de-stem the white button mushrooms. Dice into pea-sized pieces.
  3.  Quarter each baby carrot lengthwise and dice finely.
  4. Finely chop the red onion.
  5. Cut the jalapeño in half, remove the seeds and ribs to your liking. Dice finely.
  6. Chop up the five sprigs of coriander.
  7. Stir all the ingredients together and add a squeeze of lime juice and a pinch of salt.
  8. Place the cooked salmon on top of a bed of cooked black rice and place the mushroom salsa on the side.
